Cold pressing is when the oilseeds are pressed without any heating which ensures that the physiological and chemical properties of the extracted oil and meal, including natural taste, are preserved.

Pressing of any oilseed produces heat. But in cold pressing, the oilseeds are not precooked (to soften them up and make them easier to press). The oil produced this way preserves its natural properties, including taste. It also has lower peroxide values, low free fatty acid levels, and zero cholesterol. Since this oil preserves its natural flavor, aroma, and nutritional value, cold-pressed oil is considered healthier than refined oil.
